Charred corn, creamy feta, and a squeeze of lime! This zesty, kidney-friendly and heart-healthy Mexican Street Corn Salad is bursting with flavor in every bite.

Makes 4 servings

  • 4 ears corn, cut from the cob
  • 2 tbsp avocado oil
  • 1 jalapeno, diced, remove seeds for less spicy option
  • ½ cup red onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp feta cheese, crumbled
  • ¼ cup plain Greek yogurt
  • 2 garlic cloves, minced
  • 2 limes, juiced
  • ¼ tsp teaspoon chili powder
  • ½ tsp black pepper
  1. In a small bowl, mix Greek yogurt, minced garlic, lime juice, chili powder, and pepper. Whisk until combined. Set dressing aside to chill in the fridge while preparing corn.
  2. In a skillet, heat avocado oil over medium heat and roast 4 ears of corn, turning every 3-4 minutes until evenly charred. After cooling, cut the kernels off the cobs.
  3. In a medium bowl, combine the corn kernels, diced jalapeño, chopped cilantro, diced onion, and crumbled feta cheese. Pour the Greek yogurt dressing over and gently toss to combine.
  4. Enjoy!

Zesty citrus, garlic, and tender chicken come together in these kidney-friendly fajitas. Expect a bold flavor-packed dinner that's ready in minutes!

Makes 4 servings

  • ½ lb chicken breast, cut into thin strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 white onion, sliced
  • 1 serving homemade low-sodium taco seasoning mix (see recipe)
  • 3 cloves garlic, minced
  • 2 limes, juiced
  • 2 tbsp olive oil
  • 8 corn tortillas
  • Optional toppings: fresh cilantro, jalapeños, avocado slices
  1. In a large freezer bag, mix chicken strips, olive oil, lime juice, minced garlic, and low-sodium taco seasoning. Make sure the chicken is well coated. Marinate for up to 24 hours.
  2. Heat a cast iron skillet on medium-high. Take the chicken out of the marinade (saving the marinade for later) and place it in the skillet. Cook for 5 minutes until it starts to brown, then flip it and cook for another 4-5 minutes until it reaches 165°F. Set the chicken aside.
  3. In the same skillet, add chopped onions, bell peppers, and the saved marinade. Cook for 7-8 minutes until the vegetables soften and brown.
  4. Add the chicken back to the skillet and heat for 4-5 minutes. Warm corn tortillas in the oven. Fill each tortilla with 1/3 cup of the chicken and vegetable mix, and add your favorite toppings.
  5. Enjoy!
