Makes 4 servings
- ½ lb chicken breast, cut into thin strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 white onion, sliced
- 1 serving homemade low-sodium taco seasoning mix (see recipe)
- 3 cloves garlic, minced
- 2 limes, juiced
- 2 tbsp olive oil
- 8 corn tortillas
- Optional toppings: fresh cilantro, jalapeños, avocado slices
- In a large freezer bag, mix chicken strips, olive oil, lime juice, minced garlic, and low-sodium taco seasoning. Make sure the chicken is well coated. Marinate for up to 24 hours.
- Heat a cast iron skillet on medium-high. Take the chicken out of the marinade (saving the marinade for later) and place it in the skillet. Cook for 5 minutes until it starts to brown, then flip it and cook for another 4-5 minutes until it reaches 165°F. Set the chicken aside.
- In the same skillet, add chopped onions, bell peppers, and the saved marinade. Cook for 7-8 minutes until the vegetables soften and brown.
- Add the chicken back to the skillet and heat for 4-5 minutes. Warm corn tortillas in the oven. Fill each tortilla with 1/3 cup of the chicken and vegetable mix, and add your favorite toppings.
- Enjoy!
