Frosted Lemonade

Servings: 2

Ingredients:

  • ⅓ cup lemon juice, fresh squeezed
  • ½ cup plain Greek yogurt, nonfat
  • 1 cup coconut milk
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 3 cups ice
  • 2 tbsp coconut whipped topping

  1. Blend all ingredients, except the ice. Chill the lemon mixture if it’s warm.
  2. Before serving, crush the ice in the blender, then add the chilled lemon mixture and pulse until smooth and frosty.
  3. Top with coconut whipped topping and enjoy!

Grilled Fish Kabobs

Grilled Fish Kabobs

Servings: 5

Ingredients:

  • 1 lb cod filets, cut into 1 inch cubes
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 purple onion, cut into chunks
  • 1 zucchini, cut into ¾ inch thick rounds
  • ¼ cup olive oil
  • 1 tbsp minced garlic
  • 1 lemon, juice and zest
  • Black pepper to taste
  1. Whisk together olive oil, garlic, lemon zest, and pepper in a small bowl.
  2. Place the cod in one large bowl and the peppers, onions, and zucchini in another. Divide the olive oil mixture between the bowls and toss to coat. Cover and marinate at room temperature for 30 minutes to 1 hour.
  3. Preheat the grill to medium-high heat (375-425°F). If using wooden skewers, soak them in water for at least 30 minutes.
  4. Thread skewers with veggies and fish and brush kabobs with leftover marinade.
  5. Brush the grill with oil, then place the kebabs on the grill. Cook for 3 to 5 minutes per side until the cod is cooked through and lightly charred.
  6. Enjoy!

Chocolate Coconut Parfait

Servings: 2

Ingredients:

  • 1 cup almond milk, unsweetened
  • 2 tbsp cocoa powder, unsweetened
  • 4 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup shredded coconut flakes, unsweetened
  • ½ cup fresh raspberries
  1. Whisk the milk, chia seeds, cocoa powder, maple syrup, and vanilla extract together in a medium bowl or small jar. Make sure to mix in any cocoa powder that sticks to the sides and bottom.
  2. Cover the chia pudding and place it in the refrigerator. Let it chill until it thickens and becomes creamy. This takes at least 4 hours, but it’s best to leave it overnight.
  3. Before serving, stir it well and divide it into two portions. You can enjoy it with fresh coconut flakes and raspberries if you like.
