Mock Marg

Servings: 

Ingredients:

  • 3 tbsp fresh squeezed lime juice
  • 2 tbsp fresh squeezed orange juice
  • 2 tsp agave syrup
  • 12 oz sparkling water, unsweetened
  • 1-2 slices of lime or orange to garnish
Mock Marg
  1. Add lime juice, orange juice, agave nectar, and ice to a glass.

  2. Stir the mixture for 15 seconds until well combined.

  3. Pour in sparkling water and add extra lime or orange slices for garnish.

  4. Enjoy!

Jalapeno Salsa

Strawberry Jalapeño Salsa

Servings: 4

Ingredients:

  • cup strawberries, finely chopped

  • 1 cup mango, finely chopped

  • 1 jalapeno pepper, minced

  • ¼ cup red onion, finely diced

  • ¼ cup fresh cilantro, finely chopped

  • 1 lime, juiced

  • Black pepper to taste

  1. In a large bowl add strawberries, mango, jalapeno pepper and red onion.

  2. Squeeze 1 lime for juice, add cilantro and black pepper.

  3. Mix well to combine.

  4. Serve with yellow corn tortilla chips.

  5. Enjoy!

Grilled Cod And Vegetables Foil Packets

Servings: 2

Ingredients:

  • 2- 3 oz cod filets

  • 1 zucchini, thinly sliced

  • 1/2 cup yellow bell pepper, chopped

  • 10 fresh green beans, cut into 1″ pieces

  • 2 cloves garlic, minced

  • 1 lemon, juiced

  • 2 tbsp olive oil

  • 1 tbsp fresh thyme leaves

  • 1 tbsp fresh chopped oregano

  • ¼ tsp black pepper

  • Non-stick spray

  1. Preheat the grill to medium-high heat.

  2. Cut two 18-inch pieces of aluminum foil and spray the centers with cooking spray.

  3. In a bowl, combine the vegetables with one tablespoon of olive oil, half of the herbs, salt, and pepper.

  4. Spoon about a cup of the mixture into each foil packet, then place a cod fillet on top.

  5. Rub the remaining olive oil on the cod, sprinkle with the rest of the herbs, season, and squeeze lemon juice over everything.

  6. Fold and seal the foil packets.

  7. Grill for 12 to 15 minutes until the fish is cooked and the vegetables are tender.

  8. Enjoy!

Grilled Cod
Air Fryer S'Mores

Air Fryer S’Mores

Servings: 1

Ingredients:

  • 1 graham cracker sheet- each 2 squares, broken in half

  • 1 marshmallow, broken in half

  • 1 oz (small square) dark chocolate

  1. Place graham cracker halves in the bottom of the air fryer.

  2. Take the sticky side of a broken marshmallow and press it onto the graham cracker to make it stick.

  3. Close the air fryer. Cook at 390°F for 5 to 7 minutes, until the tops of the marshmallows are golden brown.

  4. After cooking, add a piece of dark chocolate on top of the marshmallows.

  5. Place the other half of the graham cracker on top.

  6. Enjoy!
