It’s not always easy to stick to a healthy diet during this time of year, but these recipes will satisfy all the savory and sweet cravings the holidays bring using nutritious, tasty, and seasonal ingredients.

Holiday Salad
Servings: 6
Ingredients

3 cloves garlic, unpeeled

1½ Tbsp lemon juice
-
1 Tbsp olive oil
-
2 tsp Dijon mustard
-
1 tsp honey
-
1 lb of asparagus, trimmed
-
4 cups broccoli florets
-
4 cups baby spinach
-
¼ cup fresh pomegranate seeds, to serve

2 Tbsp slivered almonds, to serve
- Preheat oven to 320°F. Line a baking tray with parchment paper. Put the garlic on the tray and roast it for 20-25 minutes until it is soft. Let it cool.
- Squeeze the soft roasted garlic into a bowl. Mash it and mix in lemon juice, oil, mustard, and honey.
- Steam the asparagus and broccoli for 2-3 minutes until they are tender. Cool them quickly under cold water and drain well.
- On a plate, layer the spinach, asparagus, and broccoli. Drizzle the roasted garlic dressing on top and add pomegranate seeds and slivered almonds.

Cranberry Orange Turkey
Servings: 6
Ingredients:
3-4 lb turkey breast roast, boneless
Rub Blend:
2 Tbsp brown sugar
4 garlic cloves, minced
2 Tbsp canola oil
1 Tbsp dark molasses
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground black pepper
Sauce:
2 cups fresh cranberries
14 oz can whole berry cranberry sauce
1/2 cup orange marmalade
1 cup orange juice, fresh
1 orange zested
2 Tbsp cornstarch

Preheat oven to 375°F.

Mix the “Rub Blend” ingredients in a small bowl and rub it onto the turkey.

In a medium bowl, combine the cranberry sauce, orange marmalade, fresh cranberries, and orange zest. Stir to mix.

Whisk orange juice and cornstarch in a cup, then stir into the cranberry mixture.

Grease a roasting pan that fits the turkey snugly. Place the turkey breast roast in the pan and pour the cranberry mixture around it.

Bake for about 1 1/2 hours, or until the turkey’s internal temperature reaches 165°F.

Remove the roasting pan from the oven, cover it with aluminum foil, and let it rest for 15 minutes before slicing the turkey.

Garnish with fresh cranberries and extra orange zest before serving

Pumpkin Cheesecake
Servings: 8
Ingredients:

1 graham cracker pie crust
-
1 egg white
-
½ cup liquid egg substitute
-
16 oz low-fat cream cheese
-
½ cup pure maple syrup
-
1 tsp vanilla extract
-
½ cup pumpkin puree
-
1 tsp pumpkin pie spice
OPTIONAL
8 tbsp lite whipped topping, thawed
Preheat oven to 375 °F.
Brush pie crust with egg white and bake for 5 minutes at 375℉. Remove crust from oven and reduce oven heat to 350℉
Using an electric mixer, combine softened cream cheese, syrup, and vanilla extract. Add egg substitute, pumpkin puree, and pumpkin spice. Blend until smooth.
Pour the filling into the pie crust and bake for 40-50 minutes at 350 °F. Let cool for 20 mins and refrigerate for 1 hour.
Top with 1 Tbsp of lite whipped topping before serving.
