Here are some fun and healthy recipes to help you savor the summer!

Strawberry Splash Drink

Servings: 

Ingredients:

  • 1/2 cup freeze-dried strawberries.
  • 1/2 cup coconut milk, unsweetened.
  • 1-12 oz can of strawberry flavored sparkling water, unsweetened.
  • 1 cup of ice.
  1. Pour freeze-dried strawberries into glass.
  2. Add sparkling water, stir, and let it sit for a few minutes
  3. Add ice to the glass and pour in coconut milk
  4. Stir well to combine
  5. Enjoy!

Salmon & Veggies (Summer Campaign)

Lemon Garlic Salmon & Roasted Veggies

Servings: 6-8

Ingredients:

  • 6 3oz salmon filets
  • 1 bunch fresh asparagus, chopped
  • 1 small head of broccoli, chopped
  • 1 red pepper, chopped
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 4 tbsp olive oil
  • ¼ tsp black pepper
  • ¼ cup fresh parsley, chopped
  1. Prepare and chop fresh vegetables.
  2. Place 6 18×12 inch pieces of heavy aluminum foil on the counter.
  3. Place salmon filets in the center of foil and scoop about 1 cup of vegetable mixture on top.
  4. In a small bowl mix olive oil, minced garlic, lemon juice, black pepper, and fresh parsley.
  5. Pour the lemon garlic oil mixture evenly over each of the 6 salmon/veggie servings.
  6. Double fold tops and ends of each piece of foil.
  7. Place foil packets on grill and cover.
  8. Grill on medium heat for 15-20 minutes or until salmon is cooked through and vegetables are soft. (Foil packets can also be baked in the oven at 400℉ for 15-20 minutes if you do not have a grill).
  9. Once cooked, carefully open packets and serve.
  10. Enjoy!

Balsamic Grilled Chicken Kabobs

Servings: 8

Ingredients:

  • 2 pounds boneless, skinless chicken breast, cut into 1” cubes
  • 1 red bell pepper, cut into cubes
  • 1 orange bell pepper, cut into cubes
  • 1 yellow bell pepper, cut into cubes
  • 1 red onion, cut into cubes
  • 1 zucchini, cut into ½” slices
  • 1 yellow squash, cut into ½” slices
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp dry basil
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  1. Combine balsamic vinegar, Dijon mustard, honey, olive oil, basil, pepper, and garlic powder in a small bowl. Whisk together until well combined.
  2. Cut chicken breasts into 1” cube pieces. Place chicken cubes in a large bowl. Pour half of the balsamic mixture over the chicken cubes and stir well until evenly coated. Cover the bowl with plastic wrap and place in the fridge to marinate for at least 30 minutes.
  3. Prepare and chop vegetables.
  4. Once the chicken has marinated, begin assembling kabobs alternating vegetables with chicken on a skewer.
  5. Place the kabobs on preheated grill and cook on medium heat for 4 minutes on each side, or until charred. Brush the remaining balsamic mixture on the kabobs and grill for an additional 2 minutes. Carefully remove kabobs from grill.
  6. Enjoy!

Frozen Cool Whip Sandwich (Summer Campaign)

Frozen Whipped Topping Sandwich

Servings: 4

Ingredients:

  • 4 Graham cracker rectangles- each 2 squares
  • 8 tbsp light whipped topping
  • 1 tbsp rainbow sprinkles
  1. Break graham cracker sheets in half. Each sheet will be 2 square pieces.
  2. Top half of the graham crackers with 2 tbsp light whipped topping. Place the other half of the graham cracker on top to make a “sandwich.”
  3. Smooth the edges of the sandwich with a spoon. Dip each edge of the sandwich into sprinkles to coat.
  4. Freeze for at least 2 hours in the freezer until frozen through.
  5. Once frozen, remove from the freezer.
  6. Enjoy!
